- 1/2 Poblano pepper
- 1 Potato, medium
- 2 15 oz. cansTomatoes, no-salt-added
Canned Goods
- 1 6 oz. can Tomato paste, no-salt-added
Condiments
- 1 tbsp Maple syrup
- 1 tbsp Soy sauce, low sodium
Pasta & Grains
- 1 cup Quinoa, dried
Baking & Spices
- 1 pinch 1/2 tsp red pepper flakes
- 1/4 tsp Black pepper
- 2 tsp Chili powder
- 1 tsp Paprika, smoked
